Brine

After the selecting and cleaning process, mushrooms are blanched in a solution of citric acid and salt. After a cooling period, the product is allowed to ferment before being transferred into a high salt brine solution in PVC barrels. At a later stage the mushrooms are cleared of the brine, bottled in oil and packed for distribution.
