Eryngii or king oyster mushroom is the largest of the oyster mushrooms and unlike the others, their stalks aren’t tough and woody to eat. Instead, they’re hailed for their meaty texture and umami flavor. Eryngii mushrooms are native to the Mediterranean regions of Europe, the Middle East, and North Africa, and are also grown in many parts of Asia.
