Taste and Texture

Shittake caps have a soft, spongy texture. When cooked, these mushrooms have a rich, smoky flavour and a meat-like texture.

Preparation

Re-hydrate by immersion in hot water for about 10 - 15 minutes. Drain, strain and retain the water to use as a flavour enhancer when cooking.

Can also be re-hydrated in warm milk or wine at room temperature, depending on recipe requirements.
